Your allergen chart went stale when the sauce changed. Change it once. Every dish follows.
A dish’s allergens in Tullia aren’t typed into a chart. They are worked out from its ingredients and every batch inside it. So when you change a sauce or an ingredient, every dish that uses it is worked out again when you save.

Charts don’t know when a recipe changes.
A cook swaps a bread. A supplier changes a product. The dish changes that day, and the chart on the wall stays the same until somebody remembers.
- SesameWhen sesame became the ninth major allergen in 2023, some bakers added it to their breads on purpose rather than clean their lines.FARE, on sesame flour and the FASTER Act
- Every rowon the chart that uses the old sauce is wrong the moment the sauce changes, until someone finds and fixes each one by hand.
A hand-kept chart, and Tullia. The same five moments.
Most kitchens keep an allergen chart by hand: a spreadsheet or a binder that someone updates when they remember to. Here is what changes when the chart is worked out from the recipes themselves.
| A hand-kept chart | Tullia | |
|---|---|---|
| Where a dish’s allergens come from | Someone types them into a chart, dish by dish. | They are worked out from the dish’s ingredients and every batch inside it. |
| When the dressing changes | Find every dish that uses it, then fix each row by hand. | Change the dressing once. Every dish that uses it is worked out again when you save. |
| When a supplier changes a product | Hope someone remembers which charts and printouts mention it. | Change that ingredient’s allergens once. Every dish that uses it follows. |
| Knowing what else moved | Nobody knows until a server asks. | Before you save, Tullia names the other saved dishes the change touches. |
| The printout on the wall | Made once, then copied until it fades. | Made from your saved dishes each time you print it. |
Before you save, it tells you what else moves. No surprises on the floor.
When a change reaches other dishes that are already saved, the save sheet adds one line naming them. You see exactly which dishes will change before you tap Save.
The same happens on the Ingredients page. Change an ingredient’s allergens, say because a supplier changed a product, and every dish that uses it is worked out again before the screen says Saved.
One real change, start to finish. The croutons get a new bread.
In a real Tullia session, a chef swapped the sourdough in the croutons for a bread from their bakery. The new bread was new to Tullia, so it asked what was in it. The chef read out the ingredients.
Tullia updated the croutons, then the House Caesar. Wheat came off the dish with the sourdough. Eggs stayed, because the dressing already had eggs and the new bread did too. The chef checked it on one sheet and saved.
