How Tullia works. One dish, start to finish.
Follow a real House Caesar from the chef’s words to the server’s phone. Seven short steps. Each one shows what you do and what Tullia does.
Step 1: Get your recipes in.Talk, type, or bring a file.
Tell Tullia’s AI sous chef the recipe the way you’d tell a new cook. Amounts, ingredients, how you make it. It writes the recipe down while you talk.
- TalkTap the mic and say it.
- TypeUse the message box, from a phone or a computer.
- Bring what you haveDrop in a photo, a PDF or a spreadsheet of a recipe you already wrote down.
Step 2: Watch the recipe build. With its batches.
As you go, the recipe fills in on screen: its name, each ingredient with its amount, the steps and the yield.
Some things you make in house and use inside dishes, like a sauce, a dressing or a dough. Tullia keeps each one as a batch: its own recipe, used inside your dishes. On screen, the dish is called the plate, and its batches sit beside it.
The House Caesar has two batches: the Caesar Dressing and the Garlic Croutons. Anything wrong? Tap the line and fix it, or just say what to change. Cooking for a crowd? Scale the recipe by portions.
Step 3: Allergens, worked out.Up to the dish.
Tullia records the Big 9 for every ingredient. The Big 9 are the nine major food allergens named by the FDA: milk, eggs, fish, shellfish, tree nuts, peanuts, wheat, soybeans and sesame.
Each ingredient either Contains an allergen or is Free from it. When Tullia can’t tell, like with a house blend or a product it doesn’t know, it asks you.
Nobody types in a dish’s allergens. They come from its ingredients, including everything inside its batches, and batches inside batches.

Step 4: Check it on one sheet. Then tap Save.
When the recipe is ready, one sheet shows everything to check:
- The dish name and its menuTullia picks the menu. Tap to change it.
- The Big 9 for the whole dishRed means the dish contains it.
- Every ingredient and batch, with its allergensTap a row to change its allergens. That is your check.
- One Save buttonSaving the dish saves its batches too.
After you save, the dish is listed under its menu on Menus, the screen where all your dishes live.
Step 5: Your team sees the same dish.To read, not to change.
Everyone on your team gets their own sign-in. You choose what each person can do: a Chef can change recipes, and Front of house can look.
- Look up any saved dishSearch by name and open it.
- See what’s in itEvery ingredient, every batch, and the dish’s Big 9.
- Nothing to get wrongNo message box and no Save button on their screen.
- One answer for the kitchen and the floorIt backs up your allergen procedure. It doesn’t replace it.
Step 6: Change a batch once.Every dish that uses it follows.
Change a sauce, a dressing or the croutons, and every dish that uses it is worked out again when you save. If the change touches other saved dishes, the save sheet names them before you tap Save.
Here the chef swapped the sourdough in the croutons for a bread from their bakery. Tullia asked what was in the new bread, then updated the croutons and the dish together.
Step 7: Print it. Export it.Paper for the line and the floor.
Download a dish, the allergen grid or your whole menu. Front of house can download a dish and the allergen grid too.
- A dish, as a PDFIts ingredients, steps and Big 9, ready to print.
- The allergen gridAs a PDF to print, or as a spreadsheet file (CSV).
- Your menus, as spreadsheetsOne spreadsheet per dish: the dish on the first tab, then a tab for each batch. All in one download.
See it for yourself.
